Vegan Muffin recipe

As some of you know, I am a vegetarian bordering on the vegan side. For me, this is a mindset against animal cruelty, as I am vehemently opposed to the meat industry. This does not mean I don’t like the taste of animal products, and like this, I try to recreate taste and consistency. I also bake and cook a lot, and my Muffins are quite famous.

So I thought I am going to share the basic recipe. Keep in mind I use metrics and Celsius for measurements.

You will need:

Plain Flower (pay attention what you buy, as a lot is filled with chemical crap you would not expect in a primary product such as this)

1 Tablespoon of Baking soda.

1 Tablespoon of Natron.

200 ml Coconut Oil.

4-6 Tablespoons of Maple Syrup.

About 400g of fruits, chocolate or whatever else you fancy for a filling, my favorite are cranberries.

400 ml of juice, cider or some other fluid. I use Orchard Thieves Cider (The best Irish cider ever)

Replacement for three eggs (I use MyEgg I order at alles-vegetarisch) this you will mix in a bit of water before adding to the dough.

Some muffin forms and inserts (I have reusable ones from Amazon)

Some chocolate or something else for the topping. I buy the 72/79% dark chocolate from Tesco sweet stuff range, not the baking one)

You want to mix all of the ingredients, melt the coconut oil for this, microwave 1 minute is fine). Then you preheat the oven onto 200 oC. Fill the forms up to the top with the dough. Keep an eye on the muffins but 20-30 minutes should do the trick. Once they are out of the oven to cool them down if you’re in Ireland half an hour outside protected from rain should do the trick. Melt the chocolate, add either chili, ginger or orange juice for the kick, and let cool down. The Muffins are good to eat for 3-7 days depending on the weather. I made them with popcorn and lots of other things as filling nd topping in the past as well, just stick to the basic recipe and exchange the fruits and juice.
